I actually don't think the core-item
should have a core-icon
, since there's lots of items that doesn't have an icon in it.

I think you misunderstood: I have a core-item and in it I have two core-buttons on each end and in those buttons the icon gets styled under the polyfill.
I Believe the core item is designed to be used as container for sections that are styled and sized to be touch-ready (thus the min-height of 40 pixels) and that core item should be able to host anything that is 'touch-worthy' including the core-button element.
