Use pytest as our test runner. It seems very powerful, and uses plain Python assert statements, rather than the plethora of specially-named assert-xyz() functions.

Goal is to bring code coverage up to over 90% coverage. Is 100% doable?

Actually, after hearing some things Kent C. Dodd said about testing and coverage, I no longer think 100% coverage is a reasonable goal. Even 90% may be unnecessarily high. It all depends on which code areas and paths are most critical.
