GuiceFilter is registered as Servlet instead of Filter
Right now Jersey is (wrongly) registered as a Servlet (invoking ServletModule.serve() instead of filter()). Doing it as a Filter would allow to use
.put(ServletContainer.PROPERTY_WEB_PAGE_CONTENT_REGEX, "/_ah/.*")
Which is ignored for Servlets but work for Filters.
Review logging system
Either leave logging.properties properly configured or add the full JUL + logback combo.
