Support using generic Serial objects for platforms where SoftwareSerial is not present e.g. ESP32

There are platforms like ESP32 where Arduino mode does not have built in software serial and more than 1 hardware serial ports are available. Easier approach is to pass in a pre-initialized Stream object. Making a PR soon. with an example and a patch for the library. However I have a hardware question , what baud rate is default on the MCP39F511 (N) ? Datasheet says 115200, your defaults are 19200.
