I removed the fontspec package on a fork of your repo to be able to use it without any "fancy" latex versions. It looks fine to me and I would have opened up a feature branch pull request but unfortunately, that's not possible on github. I really like the theme and think it might be useful to give users a more "easy to use" version of it.
