Build fails with latest libsrtp version about janus-gateway

Don't build with srtp latest master, use tag v2.5.0.

No. The README gives some hints, or you can check what versions our Github actions uses.

FWIW v2.6.0 seems to work fine as well (at least with janus 0.x)

Not sure about the version number, but the latest master branch has changes in the signatures in a few methods (protect methods in particular, apparently). Sooner or later we may have to add fences in the code to use one or the other depending on which version we linked to.
