I had also trouble when I switched from .net6 to .net8.
We have a part of the system running on a x64 PC. This PC is sending data with MessagePack via network to a server running a .net c# Application on Linux. Both applications are working fine when we use .net6.
After changing to .net8 we got an "Invalid union data detected" error from MessagePack when we deserialised a message.
This error was gone, after I had changed the publish settings for the Linux Part. The "Trim unused code" setting must not be set! The size of the Linux App increases from 17 MB to 75MB, but we got a working system.

Are you compiling with NativeAOT, perhaps? That requires special configuration to make work. Check out our README file on the topic. NativeAOT doesn't support dynamic code generation. But NativeAOT isn't strictly a .NET 8 topic. It existed before .NET 8, and it isn't the default mode on .NET 8 either.
