The method _prepareBody in Class Ebay_Client, is missing something!
At the moment it is not possible to call methods with params against the api 
e.g. AddItem

I added following function to the class
private function _arrayToXML($params)
    {
        $xml = '';
        // loop through the data passed in.
        foreach ($params as $key => $value) {
            // if there is another array found recrusively call this function
            if (is_array($value)) {
                $xml .= "<$key>" . $this->_arrayToXML($value) . "</$key>";
            } else {
                $value = htmlentities($value);
                $xml .= "<$key>$value</$key>";
            }
        }
        return $xml;
    }

This function I call in the _prepareBody method:

    {
        $requestType = $method . 'Request';

        $this->_body  = '<?xml version="1.0" encoding="utf-8"?>';
        $this->_body .= '<' . $requestType . ' xmlns="urn:ebay:apis:eBLBaseComponents">';
        $this->_body .= $this->_arrayToXML($params);
        $this->_body .= '<RequesterCredentials>';
        $this->_body .= '<eBayAuthToken>' . $this->_session->getToken() . '</eBayAuthToken>';
        $this->_body .= '</RequesterCredentials>';        
        $this->_body .= '</' . $requestType . '>';
