Need some more workflows to prove buildability

As titled.

CPack failing for some toolchains

Appears to keep failing on packing of the '/docs' folder, most likely due to some enormous file/path names.

The contents of this folder are really just for the Github Pages deployment and not likely to be wanted by any contributers, etc.

Best to simply remove '/docs' from CPack to resolve all the above.

Move all documentation and Pages over to dedicated branch

relates to #9

Contributors and users will not likely want to pull in the whole HTML-project for the GitHub Pages experience. We can move all Doxygen and Pages activites to a branch that will need to stay in sync with releases.
