I did widened a bit the button so the text is readable but I can't seem the find where to set the > symbol color to white...

I've applied foreground="white" pretty much everywhere I could without success. I was about to modify the default style for the appbarbutton.flyout control, but I doubt it'll work...

This new symbol was added in the latest W10 build and doesn't seems to be anywhere in the help documentation on Microsoft website...

Which like I thought manipulated the default style of the appbarbutton, and hides the chevron icon from the button. So I created a specific style key for this particular case that I applied to the problematic button (only this one, not the others). Look for AppBarButtonHiddenChevron style in custom.xaml.
