Wrong image repo path in published manifests about opentelemetry-operator

Would just like to note that I ran into this too -- not at all familiar with this repo's build scripts but I can take a stab at a fix! Editing the published manifest back to quay.io/opentelemetry/opentelemetry-operator:0.14.0 fixed the container pull issue for me.

That does look wrong in the latest version. The previous version was still correct:

    image: quay.io/opentelemetry/opentelemetry-operator:0.13.0

I think it might be related to this PR: #105

Would you like to try to fix it?
