Currently, bitfields allow every type that implements conversion functions into their underlying type. This can be counterintuitive because the custom type is often smaller. In your example, you have to change the types of the from_bits and into_bits functions from u8 to u64 (the GdtEntry type):

impl AccessByte {
    pub const fn from_bits(value: u64) -> Self {
        AccessByte(value as _)
    }

    pub const fn into_bits(self) -> u64 {
        self.0 as _
    }
}

from bitfield-struct-rs.
