Windows CI jobs failing due to meson about mediasoup

Error is quite clear:

ERROR: Unknown options: "b_pie, b_staticpic"

Just need to find out where it comes from and why it worked before (maybe it was something deprecated that we still used historically)

The following options are available. Note that they may not be available on all platforms or with all compilers:

• b_staticpic: Build static libraries as position independent
• b_pie: Build position-independent executables (since 0.49.0)

I'm pretty sure we need at least one of them to avoid problems with some deps/subprojects.
